Miso Glazed Salmon with Sesame Soy Vegetable Medley and Lemon Butter Cream (Serves 4):
This dish from Mill’s Tavern features miso-glazed salmon paired with a vibrant sesame soy vegetable medley and rich lemon butter cream. The combination of savory, sweet, and tangy flavors create a balanced and delicious meal perfect for any occasion!

INGREDIENTS:

For the Miso Glazed Salmon:

  • 4 salmon fillets (6 oz each)
  • 1/4 cup white miso paste
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin (sweet rice wine)
  • 2 tablespoons sake (Japanese rice wine) or dry white wine
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

For the Sesame Soy Vegetable Medley:

  • 1 cup snap peas
  • 1 cup broccoli florets
  • 1 red bell pepper, julienned
  • 1 carrot, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 tablespoon sesame seeds
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

For the Lemon Butter Cream:

  • 1 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 lemon, zested and juiced
  • Salt and pepper, to taste

INSTRUCTIONS:

Miso Glazed Salmon:

  1. In a small bowl, whisk together the miso paste, soy sauce, mirin, sake (or white wine), brown sugar, sesame oil, minced garlic, and grated ginger until smooth.
  2. Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the miso marinade over the salmon, and make sure each fillet is well-coated. Marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours.
  3. Preheat the oven to 400°F (200°C).
  4. Line a baking sheet with parchment paper or aluminum foil. Place the marinated salmon fillets on the baking sheet, skin-side down.
  5. Bake the salmon for 12-15 minutes, or until the fish flakes easily with a fork and is cooked through.

Sesame Soy Vegetable Medley:

  1. While the salmon is baking, heat the olive oil and sesame oil in a large skillet over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the snap peas, broccoli florets, julienned red bell pepper, and julienned carrot to the skillet. Stir-fry for 4-5 minutes, or until the vegetables are tender-crisp.
  4. Stir in the soy sauce and sesame seeds, cooking for an additional 1-2 minutes. Season with salt and pepper to taste.

Lemon Butter Cream:

  1. In a small saucepan, melt the butter over medium heat.
  2. Add the heavy cream, lemon zest, and lemon juice. Stir to combine.
  3. Bring the mixture to a gentle simmer, then reduce the heat to low and cook for 3-4 minutes, stirring occasionally, until the sauce thickens slightly. Season with salt and pepper to taste.

Serving:

  1. Divide the sesame soy vegetable medley among four plates.
  2. Place a salmon fillet on top of the vegetables on each plate.
  3. Drizzle the lemon butter cream over the salmon and vegetables.
  4. Serve immediately and enjoy!

Tips:

  • For a more intense flavor, marinate the salmon overnight.
  • Adjust the vegetables in the medley according to your preference or what’s in season.
  • The lemon butter cream can be made in advance and reheated gently before serving.
